To begin the mission you will have to land on the pad and accept the mission. Once you've selected a mission, you will teleport next to the mission's pad. There are 2 ways to start a mission: you can land on a numbered helicopter pad (these are shown on the map which is in the top left corner) or you can click on the box in the top right with 9 white dots, this will give you the option to chose a mission. To move sideways without turning, use the left and right arrow keys. Use the WASD Keys to hover / tilt your chopper (W = tilt nose down, A = tilt left, S = tilt back, D = tilt right). Use the down arrow key to decelerate / reduce your height.
